I never made it to the pond yesterday. Although it was warm/hot, it was very cloudy. That's when I tend to get very sunburned, so I decided not to go.
Bill & I spent the day cooking. He made homemade mac & cheese for dinner last night (and lunches for a few days.) I baked a lemon cake. I also made my spaghetti bake casserole. It takes an hour and a half to put it together and bake, so I like to make it a day ahead of time. Plus, it tends to be dry the first night. If I let it sit in the fridge overnight, it gets moist. We'll have that for dinner tonight and probably tomorrow night.
I don't like cooking dinner after work, but I do like to cook on the weekends. I can entertain myself in the kitchen for hours. Cooking dinner after work is stressful for me...it's hurryhurryhurry. On the weekends, I can take the time to go through my recipes and pull out favorites that are too time consuming to make during the week.
I'm wearing my new dress to work today. It's silly that I still get so excited about having something new to wear.
What can I say? I'm still a kid at heart! Happy Monday!
